Cookie bars with confetti frosting
This cookie recipe is 3 recipes in one: you can make them bars, you can bake them in the shape of cookies or you can serve it as a birthday cake and cut it into portions for your guests. Whatever the case, I assure you that they will become your favorites this summer.
Ingredients
For the cookie ones
- 230 g soft butter
- 400 g white sugar
- 2 eggs
- 4 tablespoons of milk
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 490 g wheat flour
For the glaze
- 120 g cream cheese at room temperature
- 110 g unsalted butter, at room temperature
- 375 g icing sugar
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1-2 tablespoons of milk
Preparation
For the cookies
We preheat the oven to 175º C.
We cover our Foodie griddle with baking paper.
Using a mixer, beat the butter and sugar until well mixed. Add the eggs, milk and vanilla and beat well.
Add the salt and flour, and beat again. We transfer the cookie dough to the prepared mold, spreading it well and smoothing the top.
Bake for about 25-30 minutes until the edges are golden, but the center is soft. We let it cool completely and unmold.
For the frosting, put the room temperature butter and cream cheese in a stand mixer and beat well. Add the icing sugar, milk, vanilla extract and salt and beat until smooth.
Once the cookies cool, spread the frosting in an even layer on the cookie sheet. Sprinkle with colored noodles and cut the griddle into 16 squares or bars.
