Malaga salad

I don't know how many heatwaves we've had or how many are left this summer, so to make them more bearable, I'm sharing this Malaga-style salad today. It has a delicious blend of flavors with a lot of contrast.
Ingredients:
- 300 g salted cod
- 3 eggs
- ½ kg new potatoes
- 1 red onion
- 2 oranges
- 100 g seasoned, pitted olives (to easily remove the pit, it's important that
- they are pitted)
- Olive oil
- Vinegar
- Salt
Preparation:
- Desalt the cod in a bowl of cold water for 24 hours, changing the water at least 3 times. Drain well and pat dry with a kitchen towel. Sauté it in a little oil in a very hot pan and set aside.
- Boil the eggs in plenty of boiling water for 10 minutes and the potatoes with their skin until tender. Once they are no longer hot, chop the eggs and set aside. Peel the potatoes and cut them into pieces about 2 cm and set aside.
- Finely chop the onion and set aside.
- Peel the oranges and, removing the white pith, chop the segments into pieces.
- Remove the pits from the olives and mix all the ingredients in a large bowl. Dress with a little vinegar, oil, and salt, and finish with a sprinkle of chopped chives.
