Grilled salmon with dill and lemon sauce

A quick and easy way to cook salmon at home is on the grill. Paired with vegetables, it also makes for a complete and healthy meal.
Ingredients (for 2 people):
- 3 slices of fresh salmon
- Zucchini
- Eggplant
- Red onion
- Red pepper
- Extra virgin olive oil
- Black pepper
- Salt
Ingredients for the sauce:
- Juice of 1/2 lemon
- Zest of 1/2 lemon
- Fresh dill
- 3 tablespoons of extra virgin olive oil
- 1 tablespoon of honey
- Black pepper
- Salt
Preparation:
- We cut the zucchini into medium-thin slices . We also cut the eggplant, some red pepper, and some onion slices. Season with salt and pepper to taste and drizzle with extra virgin olive oil.
- Once the griddle is hot, we cook the vegetables . We start with the eggplant and zucchini. We season the other sides with salt and drizzle with more oil. We flip them over and cook the other side. We remove them and set them aside. We cook the onion and peppers in the same way.
- When grilling, I prefer to use sliced salmon because they cook more evenly. Salt the salmon to taste and drizzle with a little oil. Remove the fish from the refrigerator 30 minutes before cooking and have the grill hot. The stainless steel grill is perfect for cooking fish.
- Once cooked on one side, the salmon will release from the pan on its own . Flip it over and cook the other side.
- Serve on a platter , garnish with vegetables, and prepare a lemon and dill vinaigrette. Add a tablespoon of honey, four tablespoons of extra virgin olive oil, the zest and juice of half a lemon, and fresh dill to taste. Blend. Add the sauce to the fish and vegetables just before serving, and the dish is ready to serve.
