Potatoes to the importance with meat

Potatoes to importance is one of those dishes that when you taste it you won't forget.

You can prepare them with clams and shellfish, but today's mix with different meats is a treat for the palate.

A single dish for the whole family in a format that is perfect for a couple of days in the fridge.

Ingredients

1/2 sausage

250 g of Iberian pork shoulder

1 free-range chicken breast

4 large potatoes

2 cloves of garlic

2 spring onions

100 g mangetout

Meat or ham broth

2 tablespoons of flour

1 beaten egg

a little olive oil

for the mashed

3 garlic cloves

a strand of saffron

3 tablespoons of Manzanilla de Sanlúcar or fine wine from Jerez

Preparation

Cut the potatoes into wheels 1 cm thick. Add a little salt. Pass through flour and beaten egg and fry. Reserve on absorbent paper.

In a Market paellera, we sauté the garlic and the onion very chopped. When it is tender, add the chopped snow peas.

We give a few laps and add the chistorra, the prey and the minced breast. We skip and when they have released all the juice we add the mashed.

Sauté for a few minutes. We remove from the pan. We put on the base of our frying pan a bed of potatoes, cover with the minced meat and vegetables (half). We put another layer of potatoes on top and finish with more minced meat and vegetables. Cover with the broth and cook until the potatoes are tender and the broth has reduced

Serve with a little chopped chives on top
