Prawn and Vegetable Curry

There are meals that transport you to another place when you prepare them, and that’s what happens to me with this curry, which I love to serve with Basmati rice and which will take you far without leaving home.
Ingredients
- 500 g prawns or king prawns
- 1 tablespoon butter
- 2 garlic cloves
- 1/2 red onion
- 1 green pepper
- 1 courgette
- 1 red chilli
- 1 tablespoon yellow curry paste
- 1 can coconut milk
- Salt
- 1 lime
- A bunch of fresh coriander
- Chop the peppers and courgette.
- Clean the prawns, removing the vein. Sauté them in a pan with a bit of butter. Season with salt and pepper and set aside on a plate.
- In the same pan, with a bit more butter, sauté the chopped garlic and onion.
- Once ready, add the green pepper, courgette, and red chilli, and sauté.
- Add the curry paste and cook until well incorporated.
- Add the coconut milk and return the prawns. Bring to a boil. Add some chopped fresh coriander – and it’s ready!
