Nothing like a wok of noodles for any time of the year. We have prepared this today with Padrón and they are a different way of eating them.
They are super rich with just the right amount of cooking and without any fat, and together with the rice noodles they form a perfect tandem for summer.
Preparation time: 15 minutes
1 package of rice noodles
A chopped chicken breast
1 tablespoon of oil
1 spring onion (with stem)
2 dried red chilies
1 tablespoon oyster sauce
2 tablespoons soy sauce
In an Efficient wok we heat the oil. Add the peppers and sauté until soft.
We remove them to a plate and in the same wok we sauté the onion, keeping the stem together with the chicken pieces until they are well browned. We remove from the wok.
We add to the wok, the soy sauce and the oyster sauce and stir well. Add half a glass of water and the rice noodles. We move well until the noodles begin to become flexible. Return the chicken with the onion and peppers to the wok and stir well. Rectify soy sauce if necessary and serve.
