Chicken meatballs with fine herbs and tomato
Meatballs have always seemed to me a fantastic way to take advantage of leftover meat that may be left unused.
These today are chicken and pork.- Take advantage of those pieces of meat that you have left in the fridge, chop them and prepare these delicious meatballs in a few minutes.

Ingredients
For the meatballs:
2 chopped chicken breasts
1 thigh boneless and minced
5 tablespoons of breadcrumbs
2 eggs
salt and black pepper
To fry them:
2 tablespoons of flour
oil for frying
For the tomato sauce:
2 cloves of minced garlic
1 kg of crushed tomato
100ml olive oil
A few sprigs of fresh thyme
A few sprigs of fresh rosemary
salt and black pepper
Preparation:
In a bowl mix all the ingredients and knead well. We must have a mass with which we can make small balls. If the dough is too soft, we can add a tablespoon or two more of breadcrumbs.
We form the balls and pass them through flour. We fry them and reserve
In a Bra Efficien saucepan, sauté the minced garlic in a tablespoon of oil. Then add the tomato herbs. Add the meatballs and fry for about 20 minutes over medium heat until the water has partially evaporated and the tomato sauce is thick. We rectify salt.
Served with some chopped herbs on top.
