Christmas consommé
Nothing like a consommé at these parties. It will serve you the same for a certain day as to drink between binge eating and in any case you will enjoy it alone or accompanied by a little chicken, ham or pasta.
An easy recipe with a lot of flavor that is also liked by adults and children and that you can prepare once and take during all the parties because you can freeze it without any problem.

Ingredients
1/2 chopped skinless chicken and a chicken carcass
1 veal knee bone
200 gr of beef tenderloin
1 leek
2 carrots
1 onion
1 large or 2 medium potatoes
Salt
Water
400g small pasta
Preparation
In a saucepan with a Signature lid , put the chicken with the carcass, the peeled and chopped vegetables, the meat rub and a handful of salt. We cover everything with 3 liters of water.
We put on the fire and let it boil. When it starts to boil, with the help of a large spoon, we remove the foam that has risen to the surface.
Cover, lower the heat to medium power and cook for an hour. We will have to skim every 15 minutes for an hour so that the broth is very clean.
After the hour, we take out the vegetables (which we can use to make a purée or a cream) and the meat (which we can use for croquettes or we can chop to drink with the broth)
Strain the broth by putting a cloth or cotton plug on the strainer to remove all impurities.
Return the broth to our clean pot and give another boil.
Meanwhile, in a Signature saucepan , bring water to a boil. When it is ready, add the pasta and let it cook for the time indicated by the manufacturer.
We serve the broth very hot with two tablespoons of leg in the bottom.
