Golden artichokes with a mash of mint, parsley and garlic

A fresh, aromatic and super tasty way to enjoy seasonal artichokes.
Crispy on the outside, tender on the inside and full of flavour.
Ingredients
- 6 artichokes
- A handful of fresh mint
- A handful of fresh parsley
- 1 garlic clove
- Extra virgin olive oil (EVOO)
- Water
- Salt to taste
- Prepare the mash: Finely chop the mint, parsley and garlic. Place them in a mortar or bowl and generously add EVOO. Crush or mix well until you get an aromatic paste.
- Clean the artichokes: Remove the outer, tougher leaves until you reach the tender ones. Trim the tips and peel the stem slightly if needed. Gently open the top with your fingers.
- Season with flavour: Rub each artichoke with the mash, focusing on the top so the flavour soaks in while cooking.
- Brown them well: In a pan with a bit of EVOO, place the artichokes top-down (rubbed side in contact with the pan). Cook until nicely golden.
- Final steam cook: Add water to cover about 1/3 of their height. Cover and let cook over medium heat for 20 minutes or until very tender.
