Cod loin with tomatoes
An easy, healthy recipe with very few ingredients for these autumn days. You only need a good stainless steel pan to distribute the heat well and your oven.
Preparation time: 25 minutes
Ingredients for 4 people):
4 pieces of cod loin (about 150 g each)
200 g cherry tomatoes
4 cloves of garlic
1 handful of pine nuts or pistachios
2 sprigs of basil
1 lemon (the peel)
1/2 glass of white wine
6 tablespoons olive oil
salt
pepper
Step by Step:
1 Peel and chop the garlic. Wash the tomatoes and cut them into slices. Chop the nuts and basil leaves (save some for decoration).
2 Heat the oil in the frying pan. Add the garlic and after 30 seconds the tomatoes. and add the cod skin side down. Cook for a couple of minutes and drizzle with the wine. Season lightly and add the chopped nuts.
3 Place in the oven, preheated to 180ºC for 8-10 minutes. Remove, sprinkle with basil and lemon zest. Move the pan a little and serve immediately.
