One of the best things about fall is the variety of colors and flavors that we can have on the table. Today we are going to prepare a pasta recipe with mushrooms and pumpkin although you can use your favorite etas.
The key is in a creamy pumpkin and cheese sauce that works magic on the plate
300 g pumpkin roasted or cooked
100g Grana Padano cheese
2 tablespoons cream cheese
2 cloves of garlic
Salt and black pepper to taste
In an Eterna saucepan we put water to boil. When it is ready, cook the pasta, reserving 1 large glass of the water used to cook the pasta.
In the same saucepan, fry the onion. When it is soft, add the pumpkin along with 100 ml of the water used to cook the pasta and bring to a boil. Blend and add the cheeses. Add a little more water from cooking the pasta if necessary. We should have a fine puree texture. We reserve
In another Eterna saucepan, brown the finely chopped garlic cloves. When they are golden, add the chopped mushrooms and sauté lightly. Add the pasta and give a few turns.
We serve accompanied by the pumpkin sauce and a little more grated cheese
