Pasta with creamy pumpkin sauce
Pumpkin is one of the most typical flavors of autumn and thanks to its unmistakable flavor it is an ideal ingredient for sweet and savory recipes. Today it is the protagonist of a delicious dish, to which it provides an irresistibly creamy and intense and delicious flavor.
Ingredients:
200 g whole wheat pasta
600 g of peeled pumpkin
60 g chicken breast
200 ml of vegetable broth
50g feta cheese
1 onion
Extra virgin olive oil
Salt
black pepper
Preparation:
Peel and cut an onion into cubes. Do the same with the pumpkin, it can be easily peeled with a peeler. Also slice a chicken breast.
In a wok add oil and sauté the onion over low heat. Add the chicken and mix. Add the pumpkin, with salt and cook for a few minutes. Add the broth and cook for 20 minutes.
In a pot with plenty of water and salt, cook the pasta.
Remove part of the pumpkin with a spoon and put it in a blender glass. We are going to crush it with feta cheese to make a sauce.
Add the sauce to the wok, let it all cook together for a few minutes.
Take the pasta al dente with a slotted spoon and take it directly to the wok so that it integrates well with the sauce and the rest of the ingredients.
Serve hot with a little black pepper and enjoy!
