Ingredients: Serves 2
- 3–4 salmon fillets
- 2 tsp sweet paprika
- 2 tsp garlic powder
- Extra virgin olive oil
- Black pepper
- Salt
For the "Marry Me" sauce:
- 4 garlic cloves
- 12 sun-dried tomatoes in oil
- 1 tsp fresh thyme
- Chilli flakes
- 1 tbsp tomato purée
- 1 tbsp plain flour
- 100 ml water (or stock)
- 200 ml double cream
- 40 g grated Parmesan
- 1 tbsp lemon juice
- Fresh basil
- Black pepper
- Salt
Method:
- This recipe is incredibly easy to make. Although it was originally created with chicken, it has since been adapted to suit almost any protein.
- You will need 3 salmon fillets – one or two per person depending on size. Remove the skin first, or simply ask your fishmonger to prepare them skinless.
- In a bowl, mix the sweet paprika, garlic powder, salt and black pepper to taste. Season both sides of the salmon evenly.
- Heat a 24 cm Hybric Cell frying pan, add a drizzle of extra virgin olive oil and cook the salmon for around 4 minutes on each side until golden.
- Using the same oil, gently fry the chopped garlic. Add the chopped sun-dried tomatoes, fresh thyme, chilli flakes to taste, black pepper and salt. Stir everything together.
- Add the tomato purée and plain flour, cooking for a couple of minutes. Pour in the water or vegetable stock, stir well and simmer for 2 minutes.
- Pour in the cream, add the grated Parmesan and lemon juice, then stir in a generous handful of chopped fresh basil. Return the salmon fillets to the pan and cook for another 4 minutes. Finish with a sprinkle of chilli flakes, black pepper and fresh basil.
