Salmon with green apple and yogurt sauce
Salmon is a blue fish very high in protein and omega-3 fatty acids. It is usually liked by both adults and children, and it is ideal both grilled and baked. Today we are going to prepare it with an accompaniment that will refresh it for these hot days.
Ingredients: 4 people
• 1/2 salmon fillet
• 1 Granny Smith apple
• 1 tablespoon butter
• 1 tablespoon brown sugar
• A few drops of lemon juice
• Extra virgin olive oil
• Salt
For yogurt:
• 125 g plain Greek yogurt
• fresh coriander
• Juice and zest of half a lime
• Extra virgin olive oil
• Salt
Preparation:
1. Clean the loin well of bones and portion it. We salt lightly and cook it on the grill with Advance stripes with a drizzle of extra virgin olive oil. We cook first on the skin side and when it has browned we turn it over and cook to taste on the other side.
2. Meanwhile wash and cut the apple into small cubes. Put a 22cm Advance pan over high heat, add the butter and brown sugar. Add the apple cubes and add a few drops of lemon. Sauté for 5 minutes and reserve.
3. To prepare the sauce, mix the yogurt together with a handful of chopped fresh coriander, the juice and the zest of half a lime in a bowl. Season to taste with oil and salt and mix.
4. We serve the salmon immediately together with the apple and the sauce.
