Meatballs in sauce

This recipe is dedicated to everyone who buys pre-cooked meals in supermarkets, so they remember that the world's best restaurant is always at home.
Ingredients:
Ingredients for the meatballs:
- 1 kg minced meat 1/2 pork 1/2 beef
- 2 slices of bread
- 60 ml milk
- A few sprigs of fresh parsley
- 1 clove of garlic
- 1/2 teaspoon of freshly ground black pepper
- 1/2 teaspoon of salt
- 1 teaspoon of nutmeg
- 1 egg
- Extra virgin olive oil
For the sauce:
- 2 cloves of garlic
- 2 spring onions
- 1 carrot, peeled and chopped into pieces
- 6 chopped mushrooms
- 1 tablespoon of wheat flour
- 4 tablespoons of crushed tomato or homemade fried tomato
- a few sprigs of fresh rosemary
- 1 sprig of fresh thyme
- 1/2 cup of cognac
- 1/2 glass of red wine
- 300 ml chicken broth
- Extra virgin olive oil
- Salt
For the herb bundle:
- 2 sprigs of rosemary
- 2 sprigs of lemon thyme
- 2 bay leaves
Preparation:
- Put the bread crumb in a bowl with the milk and set aside for a few minutes.
- In a large bowl, put the minced meat, 1 chopped garlic clove, and season with salt and pepper. Add the drained bread crumb, a little chopped parsley, the spices, and the egg. Knead well until all ingredients are fully combined.
- Form the meatballs all the same size. Heat 1 tablespoon of oil in a pan and fry them until golden brown on all sides. Set aside.
- For the sauce, sauté the chopped garlic and onion in a little oil for a couple of minutes. Add the chopped carrot and mushrooms. Cook for a few minutes.
- Add the flour, fried tomato, the wine, cognac, chicken broth, and the fried tomato, then add the herb bundle. Let it reduce for 10 minutes over medium heat and remove the herbs.
- Blend the sauce and return it to the pot. Add the meatballs and let them cook over low heat for about 10 minutes. Serve with a little chopped parsley on top.
