Potato pie with sobrasada
Who said eggs and potatoes aren't the perfect snack to share? Today, I'll show you how to prepare them.
Ingredients:
- 800 g cooked potatoes
- Extra virgin olive oil
- 80 g butter
- 1 onion
- 12 quail eggs
- 200 g Padrón peppers
- 100 g sobrasada (cured sausage)
- 100 g Iberian ham
- A little chopped chives
Preparation:
- To prepare, boil the potatoes.
- Meanwhile, chop the onion and sauté it with a little oil and butter. Season with salt and cook over low heat for about 15 minutes, until the onion is caramelized.
- When the potatoes are tender, place them with a little oil in a pan and mash them with the help of a glass. Let them brown over medium-low heat for 10-15 minutes.
- After that time, drizzle a little oil over them and bake for 15 minutes at 190°C, until the potatoes are golden brown on top.
- Meanwhile, sauté the peppers and fry the eggs.
- When the potatoes are ready, top with the onion, the sobrasada distributed in pieces, the ham, the peppers, and the eggs. Cut it like a pizza and... enjoy!
