"Marry Me" Salmon

This rich, creamy sauce went viral under the premise that no one who has tried it has ever said no to a marriage proposal.
Ingredients: serves 2
- 3-4 salmon fillets
- 2 teaspoons sweet paprika
- 2 teaspoons garlic powder
- Extra virgin olive oil
- Black pepper
- Salt
For the “Marry me” sauce:
- 4 garlic cloves
- 12 oil-packed sun-dried tomatoes
- 1 teaspoon fresh thyme
- Chili flakes
- 1 tablespoon tomato paste
- 1 tablespoon wheat flour
- 100 ml water (or broth)
- 200 ml heavy cream
- 40 g grated Parmesan cheese
- 1 tablespoon lemon juice
- Fresh basil
- Black pepper
- Salt
Preparation:
- It’s very easy to make, and while the original recipe was for chicken, it has been adapted for almost any protein.
- We need 3 salmon fillets, 1 or 2 per person; we’ll remove their skin, though you can obviously ask for skinless ones at the fishmonger.
- In a bowl, add a couple teaspoons of sweet paprika, a couple teaspoons of garlic powder, salt, and black pepper to taste. Mix well and season the salmon on both sides.
- Heat a 24 cm Hybrid cell skillet over heat, add a drizzle of extra virgin olive oil, and sear the salmon for 4 minutes per side.
- In the same oil, add 4 minced garlic cloves and lightly brown them. Next, add 12 chopped oil-packed sun-dried tomatoes, a little fresh thyme, chili flakes to taste, black pepper, and salt. Mix well.
- Add 1 tablespoon of tomato paste, 1 tablespoon of wheat flour, and toast for a few minutes. Pour in 100 ml water or vegetable broth, mix well, and cook for 2 minutes.
- Pour in 200 ml heavy cream, 40 g grated Parmesan cheese, and 1 tablespoon of lemon juice. Mix and add a handful of chopped fresh basil. Add the salmon fillets and cook for 4 minutes. Once time is up, add a few more chili flakes, a little black pepper, and chopped fresh basil.
Perfect dish, and a spectacular sauce that will make everyone fall at your feet.
