cod with tomatoes
This is one of the easiest, fastest and richest ways you will find to prepare cod.
It has no fat and is a recipe suitable for all audiences
Ingredients:
50 ml of extra virgin olive oil
1 desalted cod loin in portions
Salt and freshly ground pepper
A couple of garlic cloves, crushed
1 sprig of fresh thyme
¼ glass of dry white wine
2 cups of cherry tomatoes
Preparation:
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the cod on both sides. When the oil is hot, add the cod pieces and sear for 2 to 3 minutes on each side. We reserve on a plate.
In the same skillet, combine the remaining 2 tablespoons of olive oil and the tomatoes. Cook a couple of minutes. Add the wine and cook for about 5 minutes.
Return the cod and cook for another 3 minutes. Season with salt and add a few sprigs of thyme.
Serve the cod with the tomatoes and the sauce from the pan on top.
