Broken eggs with garlic prawns and chive oil

Any dish with eggs and chips is a guaranteed hit, but if you add garlic shrimp, it's a true masterpiece. A real delicacy fit for the gods.
Ingredients (for 2 people):
- 4 “sour” variety potatoes
- 4 organic eggs
- 350g red prawns
- 2 cloves of garlic
- 1 teaspoon of hot paprika
- Extra virgin olive oil
- Salt

- A handful of chives
- 75g of extra virgin olive oil
Preparation:
- We start by frying the potatoes; to fry a larger quantity with less oil, we use our Efficient PRO high saucepan.
- We cut the potatoes into more or less regular sticks and leave them in cold water for 15 minutes so that they lose some of their starch.
- With these quantities, and considering how delicious this dish is, we'll have enough for two people. While the potatoes are frying, we'll prepare a chive oil. Chop a handful of fresh chives and blanch them in boiling water for 10 seconds. Quickly remove them to paper towels and drain as much as possible. Blend them with 75g of extra virgin olive oil. Strain the mixture through a fine sieve and pour it into a squeeze bottle or jar.
- Once the potatoes are tender, we turn up the heat so they brown to our liking, we take them out onto kitchen paper to remove the excess oil and salt to taste.
- We move on to the serving dish, strain the oil from the potatoes and in a 22 cm Efficient PRO frying pan we pour plenty of oil (the same oil used to fry the potatoes) to fry the eggs.
- We add the eggs to the pan one by one and fry them, placing them on top of the potatoes. We salt them to taste, and all that's left are the peeled and deveined prawns.
- Remove almost all the oil from the pan, lightly brown the sliced garlic, then add the paprika, stir for a few seconds, and add the previously salted prawns. Turn off the heat and let them cook in the residual heat. Place the prawns on top of the eggs, drizzle with chive oil, and serve as is. Just before taking a bite, break the eggs so the yolks soak into the potatoes.
- All we need to do is serve this delicious dish with some good bread.
