Chickpea curry, video recipe
Peel, chop and fry the onions together with the garlic cloves. Also add the grated ginger. Peel and chop the carrots into cubes and add them. After a few minutes, add the curry, the tomatoes and continue frying. Once everything is well mixed, add the coconut milk, the chickpeas and cover with vegetable broth. Wait until it reduces and thickens.
Serve alongside cooked white rice or French fries.

- 1 large onion
- 3 garlic cloves
- grated fresh ginger
- 2 carrots
- 2 tablespoons of curry
- 3 grated tomatoes
- 200 ml. coconut milk
- 400 gr. precooked chickpeas
- 200 ml. Vegetables soup
- Spicy sauce to taste
- White rice or French fries to accompany
