Roasted pumpkin, salmon and arugula salad with balsamic dressing
Although many of us associate pumpkin with an autumn ingredient, it is actually a product that we find throughout the year and is worth consuming frequently. In summer, we love pumpkin in salads, roasted and chilled.

PROPERTIES OF THE PUMPKIN
Among its main properties, the contribution of amino acids that it gives us, the presence of oleic, palmitic and silicic acid stand out. Vitamins are another of the components present in the pumpkin, especially A and B, as well as several minerals necessary to maintain a correct diet. These nutrients are what make pumpkin a food with a good influence on the body at various levels.
It also contains high amounts of fiber and is perfect for returning our intestine to its usual state in cases of diarrhea and gastric imbalance. Along with this, it is a food that helps us improve the symptoms of rheumatism, since it is a good diuretic and in cases of arthritis and joint inflammation it is responsible for helping us to stop the liquids that in most cases cause pain.
Pumpkin seeds are also another of the parts that help us improve health, and that is that they will help us improve the general state of the body, since we can use them to reduce the effects of fever, as well as help us to strengthen the brain, because of the minerals they contain and how nutritious they are for our body. Ingredients
For the salad:
- 1 pumpkin of approximately 1 kg
- 150 gr of smoked salmon cut into strips
- 1 large tomato
- 1 garlic
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar of Modena
- 1 teaspoon Worcestershire sauce
- black pepper
- 100g spinach
- A handful of pumpkin seeds
- A handful of sesame seeds
For the dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon of honey
- 1/2 teaspoon lemon juice
- fresh thyme
- salt and black pepper
Preparation
- Preheat the oven to 180ºC.
- Peel the pumpkin and remove the seeds and internal filaments.
- Cut into 1-2 cm cubes and mix with the olive oil, balsamic vinegar, Worcestershire sauce and freshly ground black pepper.
- We place the BRA Infinity without the mango together with the garlic on the grill and bake for about 25-30 minutes, stirring halfway through cooking, until tender. Let it cold down. If we are going to use the pumpkin seeds themselves, clean them well with water, dry them and toast them lightly in a pan or in the oven.
- Wash and drain the spinach well.
- Arrange in a salad bowl, add the cooled pumpkin, salmon, diced tomato, pumpkin seeds and sesame seeds. Mix all the ingredients of the dressing well, adjusting the amount of Modena vinegar to taste, and serve.
