Quinoa, smoked almond and zucchini salad
Surely you are wondering what this smoked almonds in the title of our recipe is, we usually hear about smoked meats, fish, salmon, cheeses... Well, today we bring you a salad with smoked almonds that will give our dish a crunchy touch and an explosion added flavor.
How to make smoked almonds?
We mix coconut oil, soy sauce and a pinch of paprika along with a handful of toasted almonds. We mix it until they are well impregnated. Put them on an oven tray and bake for about 12 minutes, turning them halfway through cooking at 180ºC and lowering the temperature to halfway through cooking at 150ºC. We take them out of the oven and sprinkle with a little more paprika, garlic powder and fleur de sel.

Ingredients
For 4 people:
- 200 gr of quinoa (white or integral, we have used one with algae)
- 375 ml of water
- 2 tablespoons extra virgin olive oil
- 350 gr of sliced zucchini
- 230 gr of smoked almonds (see recipe above)
- 200 gr of crumbled feta cheese
- 2 tablespoons lime juice
- sea salt and freshly ground black pepper
- sprigs of coriander, basil or mint
Preparation
Put the quinoa together with the water in a saucepan over high heat and stir. Once it boils, cover with a lid and lower the heat. Cook for about 12-14 minutes or until the water has been absorbed. We remove from the fire and spread in a source to cool and reserve.
Heat 1 tablespoon of the olive oil in a nonstick skillet over high heat, add the zucchini and sauté for about 6 minutes or until golden brown.
Put the quinoa, courgettes, almonds, feta cheese, remaining oil, lime juice, salt and pepper in a bowl and mix well. Divide the salad into individual bowls and serve.
