Oatmeal and raisin cookies
These cookies are a clear example that we can prepare delicious cookies at home and at the same time take care of ourselves. They have oatmeal and very little flour, and brown sugar instead of white sugar. But best of all, they are delicious. They also have raisins which give it a delicious fruity touch. But if you don't like raisins you can use dried apricots or cranberries.
Ingredients
- 170g oat flakes
- 70 g all purpose flour, (spoon and leveled)
- 80g raisins
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 125g butter at room temperature
- 220g dark brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
Preparation
- Preheat oven to 180 degrees.
- In a medium bowl mix oats, flour, raisins, baking soda, yeast and salt and set aside.
- Using a mixer, beat butter and sugar until light and fluffy. Add the egg and vanilla, and mix.
- Gradually add the oatmeal mixture, taking care that it is well incorporated.
- Over one tray of efficient oven covered with baking paper, form small piles with the help of a spoon, and spaced at least 4 cm apart. Bake 13-16 minutes until cookies are golden brown.
- Let cool for a couple of minutes on the tray, then transfer to a wire rack until completely cool.
