This is one of those recipes that always makes you look good when you have guests over for lunch or dinner. It is an easy, rich and quick dish to prepare, yes, the quality of the main ingredients, in this case the hake and the clams, must be of the highest quality.
Do not deprive yourself of using a good white wine either, it is not necessary that you buy the most expensive bottle but I do not advise you to use the wine that they sell in supermarkets to cook with, that would affect the final result of the dish.
oh! And do not forget the bread, with this recipe I assure you that your guests will not stop dipping bread in the sauce.
- 4 slices of hake
- 300g of clams
- 4 cloves of garlic
- 1 onion
- 1 roasted bell pepper
- 1/2 glass of white wine
- 1/2 glass of fish broth
- chopped parsley (to decorate)
Make a puree with half the bell pepper and a little fish broth. We booked.
In a wide frying pan with a little oil, brown the onion and the garlic that we will have grated previously.
Add the clams and a tablespoon of flour. Mix everything well, letting the flour brown.
Season the slices of hake and pass them through flour. Add them to the pan along with the wine and the rest of the fish broth and leave over a low heat for four or five minutes.
Turn the fish over, add the bell pepper purée, mix and cook another five minutes.
We remove the fish and the clams, bathe them with the sauce and place some strips of bell pepper on top. We decorate with parsley.
