Manchego ratatouille with egg, video recipe
Manchego ratatouille is one of the most traditional Spanish recipes. Although its name comes from La Mancha, it is usually prepared throughout the territory. It consists of poaching different vegetables over low heat, usually those that are more accessible. It is usually accompanied with fried egg or potatoes.
Ingredients
- 1 red bell pepper
- 1 green bell pepper
- 1 large zucchini
- 1 spring onion
- 2 large tomatoes
- Quail eggs
- Salt
- extra virgin olive oil
- Oregano
Preparation
Cut the peppers, the courgette and the spring onion into cubes of approximately one centimeter.
- Pour a trickle of oil into a deep pot and start by poaching the spring onion together with the peppers. After a few minutes, add the courgette to the fry. Keep stirring over low heat.
- Meanwhile, grate the tomatoes and when everything is well poached, add to the mixture. If necessary, add a pinch of sugar to counteract the acidity of the tomato.
- Sauté over low heat for approx. 15 min.
- In another non-stick pan, fry the quail eggs.
Serve the ratatouille topped with the egg.
