Chicken is an ideal meat for cooking. In addition to being ideal for its low fat content, it is perfect to prepare it in a thousand different ways. This today is one of those recipes that are made on their own and that everyone likes. A Mediterranean touch that will delight everyone and that will solve lunches, dinners and even picnics!
Ingredients
- 1 kg of boneless chicken with skin
- 200g cherry tomatoes
- 1 can of black olives
- 1 lemon
- 2 tablespoons dried oregano
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 30 ml of extra virgin olive oil
Preparation
Preheat the oven to 185ºC
- Wash the cherry tomatoes. On a baking sheet put the chopped chicken. Add the oil, salt, pepper and oregano and mix with your hands so that all the pieces are well impregnated. Add the lemon zest and its juice and stir.
- Add the cherry tomatoes and black olives, distributing them well.
- Bake at 180 degrees for 35-40 minutes. After this time, turn on the grill and let the chicken foot brown for a few minutes.
- Serve accompanied by rice or potatoes, or as in this case with cooked quinoa, an ideal cereal to take care of yourself while enjoying food as always.
