Chicken rolls stuffed with portobello

We already know that chicken is always a success, the recipe that we bring you today is chicken thighs stuffed with portobellos, they are prepared in nothing and cooked in the oven. It is an ideal dish for guests, because we can have them prepared in advance and heat them at the last moment.

We can serve them accompanied by salad, potatoes or our favorite side dish.

Ingredients

  • 6 boneless open chicken thighs
  • 400 grams of portobellos
  • 1 onion
  • 12 strips of cured bacon
  • grated mozzarella cheese
  • extra virgin olive oil
  • Salt
  • 2 tablespoons of honey
  • fresh thyme
  • Zest and juice of 1/2 lime
  • Pepper
  • extra virgin olive oil

Preparation

  1. We will ask our regular butcher to bone the thighs and thighs and leave them open for us.
  2. First of all we are going to fry the onion together with the portobellos. We clean with a damp kitchen paper the remains of earth that the portobellos could have. Finely julienne the onion and finely slice the portobello.
  3. we put a skillet Efficient slingshot to fire. Add a splash of oil, then add the onion and lightly salt. When it starts to fry, add the portobellos. You will see that they release a lot of water, nothing happens, little by little it will reduce. Let cook over medium heat until the water has completely evaporated. Then, lower the heat and let it simmer slowly until it turns golden brown. We booked.
  4. We salt and pepper inside and out and begin to fill them. We put the thighs with the skin down. We will cut the hard part of the bacon. Place a couple of strips of bacon on each thigh. Next, we distribute the onion and portobello sauce that we had reserved, add a little grated cheese and roll up. We tie the rolls with the help of a string and brush lightly with extra virgin olive oil.
  5. We put the rolls in a iron Infinity BRA oven safe. We prepare the sauce to paint the rolls. Put a couple of tablespoons of honey in a bowl and heat in the microwave at maximum power for 30 seconds. Next, pour in the juice of half a lime and the zest of half a lime, stir well and paint with the help of a Efficient kitchen brush all the drumsticks on both sides.
  6. Bake the drumsticks in a preheated oven at 210ºC, up-down option, air for 30-40 minutes. We cut the ropes to serve, we can accompany some baked potatoes or even a salad in the center or some delicious roasted vegetables.
