Sirloin steak with potatoes
A perfect dish for these days when we fancy a different and original recipe at home now that it's still cold.
Ingredients
For the sirloin:
2 teaspoons of salt
1 teaspoon freshly ground black pepper
1 teaspoon chili powder
½ teaspoon ground cinnamon
2 pork tenderloins
2 teaspoons olive oil
100 g brown sugar
50 ml of honey
2 cloves of garlic, minced
For the potatoes
3 medium cooked potatoes
2 shallots
2 sprigs of thyme
Salt and freshly ground black pepper
Preparation
In a bowl, mix salt, pepper, chili and cinnamon.
Heat a frying pan with the oil and sear the tenderloins on all sides until they are golden brown (approximately 1 minute and a half on each side). Set aside.
Put all the spices in a mortar. Crush well and set aside.
In a frying pan or saucepan, brown the tenderloins on all sides over high heat, adding the spice mixture to coat them well. Set the tenderloins aside.
In a saucepan, put the oil with the garlic and brown well. Add the brown sugar and honey and cook until the sugar has dissolved and begins to bubble. Remove from the heat.
Preheat the oven to 175ºC. Brush the tenderloins with the glaze on all sides. Bake the tenderloins for 15-20 minutes, brushing with the glaze every 5 minutes.
Meanwhile, cut the cooked potatoes into wedges. Chop the shallots and add them to the potatoes. Season with salt and pepper and set aside.
We transfer the tenderloins to a cutting board and reserve the glaze.
We raise the oven temperature to 215 ºC and bake the potatoes for 8 to 10 minutes until they are lightly golden.
We cut the sirloins into medallions and serve them with the potatoes sprinkled with the meat sauce.
