creamy potato soup
This creamy potato soup has a touch that makes it different and that is that it is mixed with mayonnaise once it is finished. Vegetables are cooked in the Bra Tekna pot in a jiffy without adding fat. It is then blended with a little homemade mayonnaise made with olive oil.
We can serve it with some cooked or grilled prawns, a little hard-boiled egg or ham and it is perfect for days when we need to feel comfortable inside and out.
Ingredients
500g potatoes
2 carrots
1 onion
1/2 teaspoon salt
300 ml of water
3 tablespoons homemade mayonnaise
Preparation
In a Tekna pressure cooker put all the ingredients except the mayonnaise.
Cover and cook over medium-high heat. Once the pot has begun to release air, lower the heat to medium-low and cook for another 10 minutes.
Once ready, blend the vegetables until you get a smooth cream without lumps.
Little by little we will mix the mayonnaise with the cream, adding a spoonful at a time and mixing with rods by hand so that it does not cut.
Serve the potato cream and accompany with king prawns, prawns, hard-boiled egg, chopped ham, crispy onion or some croutons of fried bread.
