Cod omelette
Who doesn't like a good omelette? Today we bring you a great utilization recipe , to use a bit of cod that we have left over from another recipe, although the Cod omelette it is also a gastronomic institution in itself.
Preparation time: 30 minutes
Servings: 1 tortilla of 20 cm
Ingredients:
2 tablespoons extra virgin olive oil
1 leek
½ finely chopped onion
250 g desalted and crumbled cod
6 eggs
Salt and pepper to taste
1 onion
1 minced garlic clove
1 tablespoon chopped parsley
Preparation:
Heat a double frying pan with a little oil.
Add the leek cut into thin slices. Let fry for about 5 minutes, until the leek is very soft.
Add the cod and let it cook for about 3 or 4 minutes. We remove from the fire.
In a bowl, beat the eggs and season with salt. Add the finely chopped parsley, onion and garlic and stir.
Add the leek and cod sauce and mix well.
Heat the pan again, brush with a little oil and add the mixture of eggs and cod.
Close the pan and let cook for about 7 minutes.
We turn and let cook for about 5 more minutes, or until it sets and is at our preferred point.
We serve the omelette with a green salad of arugula, lamb's lettuce and radishes or whatever we like best.
