The Santiago cake is a traditional recipe of Galician cuisine. Its origin is unknown and it is delicious as an accompaniment to a good tea or coffee. It is a cake without any flour suitable for celiacs and if you like almonds, this is your cake.

The fish suquet is a traditional stew of the Catalan and Valencian Mediterranean fishermen. This was the way to take advantage of leftover fish that were not sold and incidentally it was used to give the fishermen a hot dish. Currently many restaurants on the Costa Brava serve this dish accompanied by the best pieces of fish.

Eating aubergines like this is, in addition to a pleasure, an original way of preparing them. Clafoutis is usually a French dessert made with cherries. It does not have dough, just the fruit and a mixture of eggs, cream sugar and vanilla that makes it juicy and smooth and does not have dough.
